What began as a passion project set a course with the belief of how dynamic and delicious rum can be, Seven Caves Spirits (7C Spirits) was founded in 2016 in San Diego by Geoff Longenecker. Inspired by the natural formations of La Jolla’s sea caves and the incredible amalgamation of rich local botanicals whilst drawing on Geoff’s culinary-rich background growing up in Louisiana, 7C Spirits is a celebration of true craftsmanship and community, small-batch by small-batch.

Every spirit we make is created in-house, from grain to glass at our Miramar distillery. While we have certain spirits available year-round, we also release special edition and limited releases based on the produce season, what’s inspiring our founder and what we may be cooking up fellow distillers and brewers we’re honored to collaborate with. 

You’ll never quite know what to expect when perusing our ludicrously small batch selection, and that’s exactly what lights us up. We’ll never distill, age or package just for the sake of it, and no batch is ready until we deem it ridiculously delicious.
