We craft each batch of gin through seasonal, local botanicals yielding a fresh and unique limited run. Utilizing only the best ingredients, harvested at their peak - we are able to harness optimal flavor and complexity based on what nature has to offer.

Like all of our spirits at Seven Caves, we make everything in house, from raw grain to your glass.

Our passion comes through our creations as amazingly fragrant, complex gins that never cease to impress any palette. From the varying flavor profiles to stunning combinations - the essence of our gin radiates quality and finesse. In short, these are unlike any gin you’ve tried before. We aim to keep it that way.

Haxa/1 - Barrel Aged Gin

Haxa/1 might be our favorite barrel aged gin ever. Distilled with juniper and fresh blood orange rind, this delicate gin was then aged in ex-Haxa mead barrels from our friends at Lost Cause Meadery. Haxa is a black cherry and currant mead, so those dark stone fruit flavors match harmoniously with as simple, yet complex gin. This is an insane gin, it is very limited and will never return.

Tropical Gin

London Dry-Style Gin

This London Dry Style Gin has a barley base, combined with the traditional juniper and coriander base. Then, we add to those flavors fresh and dried orange, dried grapefruit, fresh lemon, lavender flower, pink peppercorn and lemongrass. We rotovapped mint and honey as well, giving the sensation of sweet without imparting sweet. The result is a wonderfully complex spirit ideal for Gin & Tonics and beyond.

La Jolla Cove Gin

A taste of San Diego. Our La Jolla Cove Gin is a meyer lemon and California sea kelp infused gin inspired by the beauty of the San Diego coastline. Juniper makes its presence known on the immediate nose, but a dash of tonic or a cube of ice brings forth the real intent of this remarkable spirit. Vapor distilled using several specific parts of the kelp frond, locally harvested Meyer lemons and other botanicals which are sourced directly from the great state of California in which it is produced. This is a gin unlike any other in the world.

The 7C Army Navy tropical gin cocktail recipe by Seven Caves Distillery San Diego

7C Army Navy

GIN COCKTAIL RECIPE BELOW

-2oz Seven Caves Tropical Gin
-0.75oz Lemon juice
-0.75oz Orgeat* (almond syrup, or 2:1 simple syrup)

Tools: Measuring jigger, Shaker tins, Bar spoon, Strainer
Glassware: Nic & Nora, or Coupe Glass
Garnish: Mint sprig, Luxardo cherry, or gin-soaked pineapple wedge
Optional: Angostura, Angostura Orange, or Passion fruit Bitters

Combine all ingredients in a large shaker tin. Add ice to the small shaker. Seal and shake well, then strain into a chilled glass. Garnish appropriately.

*Orgeat can be made with 2:1 Sugar:Almond Milk. Add a bit of almond extract to the mixture if making at home. Torani Almond syrup also works fine.
