SEVEN CAVES RUM
Our molasses and cane sugar rums begin their journey in new oak casks. Every cask that enters our doors is hand selected to match the spirit we create. Through our highly-anticipated Limited Release Series we feature secondary finishing barrels. These batches spend extra time in beautiful barrels sourced directly from some of the finest bourbon, rye and Madeira houses in the world.
We do not add sugar to our spirits after distillation. Ever.
Every bottle that leaves our shop is single barrel. All are numbered. Each is exceptionally limited.
SHOP OUR RUM
The Seven Caves Black Label Rum Series is always a must. This particular release is one of our favorites ever. If there were ever a rum to be labeled the 7C Mission Statement, this would be it. a seven year old product., this rum started with Louisiana cane sugar and molasses, fermented, distilled and aged on site. We started this rum in two 30 gallon new oak barrels, then blended them and rebarreled for another four years in a tremendous bourbon barrel. This is the oldest and highest proof barrel aged rum we’ve ever released. Enjoy neat, with a cube or as an old fashioned with our 7C Rum Barrel Aged Maple Syrup. As with all 7C Black Labels we release, this one is exceptionally limited.

This 100% molasses rum white rum incorporates local citrus bursting at peak ripeness. With a nose of bold orange varietals including both fresh and in-house dried blood orange and Valencia orange peels and spices, this instant customer favorite is perfect for all the tropical cocktails you love! All natural flavors, no sugar or sweeteners added, produced and bottled in small batches at our Miramar San Diego distillery.

After a lengthy rest in a barrel shared with us from our friends at Lost Cause Meadery, our latest Exploratory Series spirit Mead Barrel Finished Rum is here. With a 46% ABV and notes of bright honey and herbs, this spirit is one of the most unique rums…period. We are HUGE FANS of Lost Cause Meadery and are super excited to be continuing our collaboration with this delicious rum!

This rum features an in-house distilled high ester white rum created specifically for the inclusion of Paru Tea Bar’s “Jasmine Wild” tea, a blend of wild-grown tea from Ha Giang and fresh Jasmine blossoms from Ha Noi, Vietnam, picked at peak ripeness. The tea was hand-blended by Paru Tea Bar owner, Amy Truong. The resulting product reminds you instantly of the subtle and delicate flavors of the best Jasmine and green teas.

The ideal rum for Tiki cocktails. The funky flavor profile in this Jamaican-inspired rum is great for cutting through citrus juice and sugary syrups. Makes for an incredibly delicious cocktail, every time.
