HOMEWORK ASSIGNMENTS
Passionfruit Syrup
1 part Simple Syrup
1 part Passionfruit Puree (like Funkins)
Blend together and store in a sealed container, keeps for 2 weeks or so in the fridge.
Honey Syrup
1 part Honey
1 part Boiling Water
Blend together and store in a sealed container, keeps for 2 weeks or so in the fridge.

serve in a collins glass or rocks glass
1oz Seven Caves Barrel Aged Rum
1oz Aperol
1oz Amaro Montenegro
1oz Fresh Lemon Juice
Garnish suggestions: Lemon Peel
Optional substitution: Rye whiskey, Tiki Gin, Other Amaros
Need: Measuring jigger, cocktail shaker tins
Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds, pour entire contents into the glass of your choice. Garnish appropriately.

serve in a Nic and Nora (if using the egg white and serving up), Collins glass, Tiki mug
2oz Jasmine Tea Rum
1 Fresh Lemon Juice
.75oz Honey Syrup
.5oz Passion Fruit Syrup
Garnish suggestions: Lemon twist
Optional: Egg white, Bourbon, Aged Rum, Rosewater
Need: Measuring jigger, cocktail shaker tins, strainer
Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds (or longer if using the egg white), and strain into the glass of your choice of glass. Use fresh ice if serving over ice. Garnish appropriately.

.5oz Fresh Lemon Juice
.75oz Orgeat
2 barspoons grenadine
Garnish suggestion: Cherry
Optional substitutions: Rich simple instead of Orgeat
Need: Measuring jigger, cocktail shaker tins, strainer
Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds, and strain (or double strain) into the glass of your choice of glass. Use fresh ice if serving over ice. Garnish appropriately.
