Founded in 2017, we started Seven Caves Spirits with the mission of crafting the finest distilled spirits using the best ingredients possible. We don't cut corners. We don't take half measures. Our craft is as much a reflection of San Diego’s rich botanicals, citrus and food and drink industry as it is about our passion for sharing our history and background growing up in Louisiana. From limited-release spirit and pantry goods collaborations with our friends around town to infusing our latest gins with citrus from your backyard haul or our farmer’s market finds, our spirits bottle the flavor of San Diego and celebrate our community in every ludicrously small batch. 7C RUM RECIPES
Pumpkin Spiced PK-ER
- 2oz Seven Caves Orange Rum or Seven Caves Mead Barrel Aged Rum
- 1oz Pumpkin Syrup
- ½ oz Coconut Syrup
- 2oz Pineapple juice
- Dash Tiki Bitters
Tools: Measuring jigger, cocktail shaker tins
Glassware: Tiki Mug, Wine glass, snifter
Garnish: Grated nutmeg and cinnamon (or pumpkin spice blend)
Optional: Seven Caves Tropical Gin, Seven Caves Mead Barrel Aged Rum, other lightly aged rum, Sonic Pebble Ice
Combine all ingredients in a shaker tin. Shake with ice (preferably cubed) for about 10-15 seconds. Strain into glassware and fill with fresh crushed ice. Garnish appropriately.
7C Gin RECIPES
Obligatory Delicious Fall Cocktail (The ODFC)
- 1½ oz Seven Caves Fall Gin
- ½ oz Seven Caves Maple Syrup
- 2 oz Fresh Apple Cider
- ½ oz Lemon juice
- 2-3 oz Ginger Beer
Tools: Measuring jigger, cocktail shaker tins
Glassware: Collins glass or Rocks glass
Garnish: Grated nutmeg or lemon peel or wedge of apple
Substitutions: Seven Caves Orange Rum or Seven Caves Mead Barrel Aged Rum
Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds, strain contents into the glass of your choice. Add a few cubes of fresh ice. Top with ginger beer. Garnish appropriately.
